Bharwa parwal recipe (stuffed parwal) – A delicious homely recipe of stuffed parwal (pointed gourd) cooked in punjabi gravy.
A disclaimer first :-) Today’s recipe is not my recipe. This recipe of bharwa parwal is my sister in laws recipe which she generously shared with me. I have tried this and it came out really well. So thought of sharing it today. Pardon me for the photographs as they were clicked during evening. Normally I click photos during day time but since I made this bharwa parval recipe for dinner, I have only these pics. Also it is quite some time since this sabji was made. The photographs were in my laptop and never saw light of the day. So finally thought I would publish this recipe and later when I get some time will update the pics with some pretty ones.
Parwal also known as potol, parbal, parval or pointed gourd is a vegetable that is cooked in many Indian homes aspecially in the eastern states of Bengal, Assam etc. As parwal taste a bit like potato it is also known as green potato. Parwal is usually cooked with other vegetables. I have already shared recipe of aloo parval sabji that is a regular dish in my home. Today’s recipe of stuffed parval is a bit different. We are going to cook it in punjabi style onion & tomato gravy. The flavors are amazing and this sabji will be very different then what you usually have. Also it is good to try giving twist to a common vegetable like parwal.

In this recipe of bharwa parwal I have used filling made from besan and peanut powder along with some Indian spices. This filling can also be used to stuff other vegetables like bhindi/okra (bharwa bhindi recipe), karela (bitter gourd) etc. The filling is easy to prepare and taste really great.

Let us first prepare our parwals for this bharwa parwal sabji recipe. Wash the parwals and remove the outer layer using peeling knife.
Make a slit lengthwise across the parwal as shown in below pic and remove all seeds from inside. Repeat this step and deseed all remaining parwals this way.
Let us make the filling mixture for bharwa parwal recipe. For this we will need red chili powder, roasted gram flour (besan), peanut powder, coriander powder, garam masala powder, sugar, turmeric powder, salt and lemon juice.
All the ingredients along with their exact quantities are shown in recipe box at the end of this post.
Mix all the ingredients describe above in a plate. Make a well in center using fingers and pour a tbsp or two of oil. Combine all ingredient and prepare filling mixture for bharwa parwal. Add enough oil to bind the mixture together.
Take the parwal in hand and fill the mixture as shown in below picture.
Repeat the process and stuff all the parwal with besan singdana mixture. Don’t worry if some of the filling remains. We will use that in gravy.
Now to make punjabi gravy for bharwa parwal we will need grated onion and tomato. You can even make paste (puree) of onion & tomato if you want.
Let us start with the punjabi gravy of bharwa parwal. For that in a non-stick thick bottom pan, heat some oil and add cumin seeds.
Once the cumin turns golden brown in color add red garlic chutney. If you don’t have garlic chutney then you can even use garlic paste and some red chili powder.
Cook for 1/2 min until the raw flavor of garlic is gone and its nicely cooked.
Now add grated onion in oil and stir well. Cook the onions in oil for 2-3 minutes until they become translucent.
Once the onion is cooked add grated tomato or tomato puree. Mix well.
Now add all dry spices like red chili powder, turmeric powder, coriander powder, garam masala powder. Add salt as per your taste and give a gentle mix to all spices. Let the spices get cook in onion tomato gravy.
Cook all the spices along with onion & tomato for 2-3 minutes until it start oozing oil.
Now add the remaining filling mixture of besan & peanut in gravy.
Combine everything together and cook for a minute. Add water at this stage in gravy if required.
Throw in the stuffed parwal in onion & tomato gravy and mix well nicely so that they are coated with gravy. Let the parwal get cooked along with gravy for 2-3 minutes. Add water in gravy if required.
Delicious bharwa parwal sabji or stuffed parwal in punjabi gravy is ready. Serve this bharwa parwal sabji with jeera paratha, roti, daal and jeera rice or steamed rice.
Bharwa Parwal Recipe Box (Stuffed Parwal)
- Parwal (pointed gourd): 250 gm
- Gram flour (besan): 2 tbsp
- Peanut powder: 3 tbsp, grounded
- Turmeric powder: 1/2 tsp
- Red chili powder: 1 tsp
- Coriander powder: 1 tsp
- Garam masala: 1 tsp
- Sugar: 2 tsp
- Lemon juice: 1 tbsp
- Oil: 1 tbsp
- Salt: 2 tsp or to taste
- Tomato: 1 1/2 cup, puree
- Onion: 1 cup, puree
- Garlic: 1 tbsp
- Turmeric powder: 1/2 tsp
- Salt: 1 tsp to taste
- Coriander powder: 1 tsp
- Red chili powder: 1 tsp
- Oil: 2 tbsp
- Wash and peel off the skin of parwal and slit from center. Remove the seeds from inside.
- Grate the onion and tomato and keep aside.
- Roast the gram flour (besan).
- In bowl take roasted gram flour (besan), peanut powder, turmeric powder, red chili powder, coriander powder, garam masala powder, sugar, lemon juice, oil and salt to taste.
- Mix well all the ingredients and the filling is ready to fill inside parwal.
- Now take the slit parwal and fill the filling inside the parwal.
- Repeat and fill remaining parval with filling and keep aside.
- In non stick pan heat oil and add cumin seeds. Cook for 1/2 min.
- Add the garlic paste and cook for 1/2 min again or till raw flavor of garlic is gone.
- Then add grated onion and cook for about 3 min.
- Now add tomato paste and other dry Indian spices like red chili powder, coriander powder, turmeric powder, garam masala.
- Cook thoroughly until the oil oozes out of the gravy.
- Add if any filling mixture is left over in the tomato gravy and stir it.
- Add filled parwal to the tomato gravy and cook for about 2 min.
- Once all ingredients are mixed well with parwal, sabji is ready to serve.
- Serve bharva parval sabji with hot chappati, dal and steamed rice.
